Your Go-To Gluten Free Vegan Cupcakes

One of the best things about baking is getting to play around with flavours. Having a good base recipe is the best way to do that! So perfect these as they are, or play around adding different flavours.


These are lovely for yourself or to give as a gift 🖤


As you can see, I’ve been practicing my icing skills!


INGREDIENTS

* 1 cup gluten free self raising flour

* 2/3 cup of sugar

* 2/3 cup of dairy free butter

* 1 table spoon of oil (I used avocado)

* 1 table spoon of chia seeds

* 1/2 cup of dairy free milk

* 1 tea spoon of bicarbonate of soda (gf if needed)

* 1 table spoon of apple cider vinegar

* For the icing:

* 1/3 cup of butter (you may need a little more)

* 1 cup of icing sugar

* 1 table spoon of df milk


METHOD

* in a bowl, add flour and sugar and mix.

* Fold in butter, milk and oil

* Mix in chia seeds, bicarbonate of soda and ACV

* Place in cupcake cases and cook for 20-25 mins at 180 degrees. Check until golden!

* Wait until cooled before adding the icing ingredients in a bowl and mixing thoroughly before decorating the cupcakes.
