
I love a tasty and simple meal. I usually just shoves these chips in the oven whilst I run around doing a million other things.
INGREDIENTS
* 1 sweet potato
* Oil of choice
* 1 table spoon of paprika
* 1 table spoon of garlic powder
* Salt and Pepper
* 1 avocado
* 1/4 of an onion (if that!)
* 6 cherry tomatoes (any tomato will do)
* Handful of fresh coriander
* 1 table spoon of apple cider vinegar
METHOD
* Pre heat the oven to 200 degrees
* Peel and slice potato - big enough that they have a nice texture but not too big that they take for ever to cook
* Line a tray with baking paper and drizzle oil and spices on the potatoes
* Using your hands or a spoon, mix the potatoes so covered evenly
* Cook for around 20-30 mins (check for soft and golden)
* Sliced and de stone the avocado and place in a bowl
* Using a fork, mash the avocado
* Slice the tomatoes and onion and add them in along with salt, pepper, coriander and apple cider vinegar
* Mix and serve with chips
