Sweet and Red Potato Latkes


Happy Hanukkah friends!

I wanted to share a dish that is commonly eaten during Hanukkah - something I believe all would enjoy!

I have had to make this free from friendly. A lot of Jewish food has egg and gluten in sadly (although lots of dairy free stuff as many Jewish people do not mix milk and meat).

Feel free to use white potatoes if you would prefer 🥔🥔🥔

RECIPE

INGREDIENTS:

1 large sweet potato

1 large red potato

1 onion

Salt and pepper

1 table spoon of gluten free flour

2 table spoon of vegan Mayo

Oil

METHOD:

Fill a pan to about half its depth with oil. Put on high heat

Peel potatoes then grate in a bowl

Do the same with the onion

Using a sieve, drain out the liquid of the potatoes and onions (really push that liquid out!)

Place back in the bowl adding salt and pepper, Mayo and flour.

Mix and then roll into patty shape

Once the oil has heated, turn down to low heat and add the patties into the pan. You want the whole thing to be in the oil so may have to do one by one.

Fry for about 5-7 minutes

Take out and place on kitchen towel to drain some of the oil.
