Fig and Pistachio Scones



I ended up slicing these and putting some jam in them, but quite frankly, they work nice as a big chunky biscuit too!


Perfect if you want to create your own picturesque afternoon tea


I have added ground flax seed which isn’t necessarily needed (although are great for the texture). I understand that sourcing ingredients can be tough, so keep in mind that this is ok to remove. This goes with the avocado oil, you can substitute it with another oil of choice 🥑🥑


INGREDIENTS

* 1 cup of self raising flour

* 1/2 cup buckwheat flour (or just more of the above)

* 1 cup of df butter

* 2 spoons ground flax

* handful of pistachios

* 3/4 cup coconut sugar (or regular)

* 1/4 avocado oil

* coconut milk to drizzle on top

* 1 fig (and more to decorate


METHOD

* in a bowl, add all ingredients bar milk and figs

* using the rubbing method, rub together to create breadcrumbs

* pre heat the oven to 180 degrees and line a tray with baking paper

* roll the mixture into small balls, slightly flattening the top

* slice the figs and press onto the top of the scones

* cook for around 15-20 mins or until golden.

* drizzle with coconut milk when cooled
