I love a nice and simple cookie recipe! Even better when they’re festive.
These cookies are delicious fresh out of the oven. A cooked one batch for a little less than planned and they were very yummy. Reminded me of #lebkuchen which I used to love!!
I used coconut sugar as I love the taste, but you can really use any sugar!
Without the icing, these cookies are #reginedsugarfree

INGREDIENTS
200g gluten free flour (and a bit more flour when it comes to cutting)
150g dairy free butter
1/4 cup dairy free milk
100g coconut sugar
3 table spoons of tahini
1 table spoon of cinnamon
1 teaspoon xanthan gum
Icing sugar
Water
Cookie cutter
METHOD
Pre heat oven to 180 degrees
Line a tray with baking paper
In a bowl, add flour, xanthan gum, milk and butter and mix
Add sugar and continue to mix, adding in cinnamon and tahini
Place flour on a chopping board or surface
Roll mixture out (or pat down to flatten)
Cut out with cutter and place on tray
Place in the oven for 20 minutes
Leave to cool if going to ice
Create icing using icing sugar and water.
Decorate and then leave to set!
