
During the festival of Passover/Pesach, Jewish people refrain from eating grains that can ferment and become leavened. Because of this, they cannot eat the cakes (and bread) that they may usually have, and often opt to use almonds instead.
Of course, many of The Free From Black Book community are gluten or grain free, so this cake is great for you too.
Ingredients:
1 1/2 cups of ground almonds
1/4 cup dairy free butter
1/4 cup sugar
2 table spoons of tahini
Splash of dairy free milk
One orange to zest and squeeze the juice of
Orange to decorate
Icing sugar to decorate
Method
Pre heat the oven to 180 degrees
In a bowl, mix the butter, ground almonds, sugar, tahini and milk
Zest the orange, then cut in half, squeezing out the juice and then mix
Roll the mixture into balls and then flatten on a baking paper covered tray
Cook for 20-25 minutes (or until golden)
Wait until cooled before dusting with icing sugar and adding a slice of orange (do note that the wetness of the orange slice, may cause the biscuit to go a bit soggy).
